. This recipe would also be great made with chorizo or tofu.
4 eggs1 Tbsp Pastamore Kettle Roasted Jalapeno Oil
1 chicken sausage, cooked
1/4 cup roasted corn
1/2 cup pinto beans
1/4 tsp cumin
1/4 tsp garlic powder
To taste salt and black pepper
4 medium tortillas
1. Crack eggs into bowl and scramble until mixed well. Cut sausage in half length-wise and cut into 1/4" pieces.
2. Heat large non-stick pan on the stove over medium low heat. Once hot, add the chicken sausage and cook until browned. Add Pastamore Kettle Roasted Jalapeno Oil
, corn, pinto beans, and spices. Mix well and cook until warm.
3. Add eggs to pan and cook until desired doneness has been reached stirring often. Season to taste with salt and black pepper.
4. Scoop 1/4 of burrito filling into tortilla and roll. Heat a small pan on the stove over medium heat. Add one burrito at a time and cook on each side until tortilla is browned. Plate and serve.
