4 medium flour tortillas
1/4 cup Pastamore Chipotle Chili Grill Sauce and Marinade
4 large eggs
3 ounces Mexican blend cheese
1/4 medium white onion, finely diced
1 cup pinto beans
To taste salt and black pepper
(1/4 cup milk/milk substitute optional)
As needed cooking spray/oil
1. Crack eggs into mixing bowl along with milk and whisk well.
2. Heat large non-stick pan on the stove over medium-low heat. Once hot, lightly coat with cooking spray and add onions. Cook for 3-5 minutes and add eggs and beans. Cook until eggs are set, stirring often. Remove from pan and set to side.
3. Heat clean nonstick pan on the stove over medium-low heat. Place one tortilla in pan and top with 3/4 ounce of cheese. Heat for 45-60 seconds. Remove from pan and place onto plate. Add 1/4 of egg mixture and 1/2 Tbsp of Pastamore Chipotle Chili Grill Sauce and Marinade. Roll up as tight as possible and return(cont.)
